These delicious energy bites are packed with healthy fats, protein, fiber, and antioxidants—perfect for sustained energy.

135g (1 cup) your favourite nuts
250g (1 ¾ cups) soft dates, pitted
A pinch of salt
100g dark chocolate (for coating)
Slightly roast your favourite nuts on the stove or in the oven.
Transfer the roasted nuts to a food processor and blend until finely ground. If you don’t have a food processor, you can finely chop the nuts by hand with a sharp knife. It will take a little longer, but the result will be just as delicious!
Add the pitted fresh dates and a pinch of salt, then blend again until the mixture becomes sticky and holds together when pressed. I don’t recommend using dried dates, but if you do, soak them overnight to soften. You may also need to add a bit more moisture—try a spoonful of your favorite nut butter to help bind the mixture.
Roll the mixture into small bite-sized balls, using about 1 tablespoon per ball.
Place the balls on a parchment-lined plate or tray. If you live in a warm country, I suggest refrigerating for 20 minutes to firm up the dough.
Melt the dark chocolate using a double boiler, microwave, or, if you roasted the nuts in the oven, simply place the chocolate in after turning off the heat.
Dip each energy bite into the melted chocolate, ensuring it's fully coated. I roll the balls into a serving spoon with melted chocolate and place them in the tray with my fingers. You can help yourself with a fork or other methods.
Place the coated bites back on the parchment-lined tray and refrigerate for at least 1 hour (or freeze for 20 minutes) until the chocolate sets.
For a lighter version: Reduce the chocolate coating or use cacao powder instead.
You can experiment by adding seeds of your choice, but keep in mind that they have a stronger flavor. I recommend using them in moderation to maintain the balance of tastes.
Alternative coatings: Instead of chocolate, try rolling the bites in coconut flakes or finely ground nuts for a naturally sweet and textured finish.
